一 监督及管理

1. 监督管理西厨房工作。

3. 监督西厨房的食品、设备的采购,确保符合酒店程序及标准。
The supervision of the kitchen food, the purchase of equipment, to ensure compliance with the procedures and standards.
二 菜单及成本控制
Menu and cost control
1. 根据酒店需要,与行政总厨一起研发、调整菜单,满足客人需求。
According to the needs, and executive chef together development, adjust the menu to meet guests' needs.
2. 监督管理西厨房食品质量、成本,满足客人需要。
In the supervision and administration of the kitchen food quality, cost, and meet the guest needs.
3. 组织编制西厨房菜谱,并对食品成本进行控制及管理。

三 推广及销售
The promotion and sales of food
1. 配合餐饮总监和行政总厨,策划年度推广计划,并按照执行.

2. 指导并执行西厨房特别活动和特殊食品的销售工作。
四 其他事宜

1. 制定西厨房培训计划并监督施行,为员工配备工作所需的工具和设备。
