1.确保所有接触客人的烹饪员工履行品牌承诺,并始终为客人提供的服务。
2.与会议宴会厨房厨师长一起,将主要精力放在提升生产力水平上,并按可接受的指导标准审慎地管理公用设施/薪水成本,确保全职和兼职员工的最佳部署及所有设备的能效。
3.审查菜单,分析食谱,确定食物、劳务、管理成本,制定合理的菜单价格。
4.估算食物的用量,制定食物和厨房物资领料单。
5.与餐务部共同建立、控制和维护整个厨房内的最高卫生级别。
Job Description:
1.Ensures that all guest contact culinary associates deliver the brand promise and provide exceptional guest service at all times.
2.Working with the Chef de Cuisine – Events Kitchen, focuses attention onimproving productivity levels and the need to prudently manage utility/payroll costs within acceptable guidelines ensuring optimum deployment of full time andcasual associates and energy efficiency of all equipment.
3.Reviews menus, analyses recipes, determines food, labour, overhead costs and assigns prices to menu items.
4.Estimates food consumption and makes requisition for food and kitchen supplies.
5.In collaboration with Stewarding Department,establishes, controls and maintains the highest level of hygiene throughout the kitchen
