职责概述
GENERAL MISSION
负责西厨房热菜区域(Hot Kitchen)的日常运营,确保所有热菜严格按照标准食谱烹制,达成成本控制目标,并维护区域内的设备安全。
Fully responsible for the daily operation, production management, output quality, and team leadership of the Western Hot Kitchen (Hot Kitchen) section. Ensures all hot dishes are prepared strictly according to standard recipes, achieves cost control targets, and maintains equipment and safety within the section.
工作职责
RESPONSIBILITIES AND MEANS
根据每日订单、宴会单及营业预测,制定热菜区域的详细生产计划,并分配任务给本区域厨师。
Based on daily orders, banquet sheets, and business forecasts, develop detailed production plans for the Hot Kitchen section and assign tasks to chefs within the area.
全面负责热菜区域在营业期间的生产节奏与协调,确保出菜顺序、速度、温度及装盘符合标准。
Fully responsible for the production pace and coordination with in the Hot Kitchen section during service hours, ensuring the sequence, speed, temperature, and plating of dish outputs meet standards.
带领热菜员工做好开餐前准备工作。
Supervise kitchen staff in meal preparation and other assigned tasks.
根据生产计划,负责申领、管理及控制本区域的食品原料、调味品及包装物料,减少损耗与浪费。
Based on the production plan, responsible for requisitioning, managing, and controlling food ingredients, condiments, and packaging materials within the section to minimize loss and waste.
监督本区域厨房设备(如炉灶、烤箱、油炸炉等)的正确使用、日常清洁与基本维护,及时报告故障。
Supervise the correct use, daily cleaning, and basic maintenance of kitchen equipment (e.g., stoves, ovens, fryers) within the section, reporting malfunctions promptly.
参与厨房内定期会议和讨论各种菜肴烹饪相关问题。
Participate in regular kitchen meetings and discuss various cooking-related issues.
协助副厨师长对新员工进行岗位培训,并评估其表现。
Assist the Deputy Head Chef in training new employees within the section and evaluating their performance.
完成上级交待的其它任务。
Carry out other tasks as directed by supervisor.
