职责概述
GENERAL MISSION
协助亚档主管，严格按照亚洲菜式要求烹制各种菜肴，保证出品质量和菜肴的特色。
Under the supervision of the Asian cuisine supervisor, we strictly adhere to Asian culinary standards to prepare all dishes, ensuring both the quality of the final product and the distinctive flavors of each dish.
工作职责
RESPONSIBILITIES AND MEANS
协助亚档主管检查验收购进货源的鲜活、质量、数量是否符合要求。
Assist the sub-division supervisor in inspecting the freshness, quality, and quantity of purchased ingredients to ensure compliance with requirements.
熟悉各种原材料的名称、产地、特点等，并随价格淡旺季，随时更换菜式。
Be well-versed in the names, origins, and characteristics of various raw materials, and adjust menu items according to seasonal price fluctuations.
服从亚档主管的工作调配，合理分工、完成日常散客及筵席的起菜。
Follow the supervisor's work assignments, allocate tasks efficiently, and handle daily orders for both individual diners and banquet services.
熟练标准地烹制厨房研究制定的季节、月、周、日特色菜。
Master the preparation of seasonal, monthly, weekly, and daily specialty dishes as per kitchen research standards.
熟悉原料、配料、调料的使用，掌握各种烹饪技能，了解酸、甜、苦、辣、咸、 鲜等特点及特性。
Understand the use of ingredients, seasonings, and condiments, and master various cooking techniques while recognizing the characteristics of sour, sweet, bitter, spicy, salty, and umami flavors.
开餐前检查所用烹饪材料是否准备妥当燃料，调味料、小料用具、厨具等，并保持所有用具的清洁卫生。
Before meals, verify that cooking materials, fuel, seasonings, small utensils, and kitchenware are properly prepared and kept clean.
开餐时随时督导打荷工作的操作规范及装盘装饰、分菜情况和出品质量，同时关注上菜程序。
During meals, supervise the standard operating procedures for serving, plating, and portioning, while monitoring the serving sequence.
贯彻厨房消防制度，认真做好厨房消防管理。
Implement kitchen fire safety protocols and maintain strict fire management practices.
完成上级交代的其它任务。
Carry out other tasks as directed by supervisor.
